So a few days ago I was watching food network, naturally, and Barefoot Contessa's very own Ina Garten made the most delicious looking salad! Tender baby arugula, roasted butternut squash, dried cranberries, toasted walnuts, shaved parmesan cheese and warm shallot dijon vinaigrette to top it off! Oh my goodness I could not WAIT to add this to my recipe box on my account on foodnetwork.com and to try it out! It came out amazing! My man even loved it! Oh and the vinaigrette, so much fun to make and to die for! Here is the recipe I saved in my recipe box!

Just a few things I noted:
- You can buy butternut squash already clean, cubed and packaged! That is what I did :) So much easier!
- When roasting the butternut squash I had to crank up the heat to 400 and had to an an extra 20-25 minutes to the roasting time. Treat them like potatoes. When they are fork tender, they are done.
- To be fancy and shave fresh parmesan cheese I used a vegetable peeler! Worked great!
- When toasting the walnuts in a dry pan, keep them on low heat and when you smell them, they are toasted!
- If you are buying your baby arugula a few days in advance, a great way to keep it fresh is to put a paper towel inside the bag and around the greens. It absorbs the moisture and prevents the greens from wilting.
