Today is our one year anniversary so I surprised Kenny Henry this morning when he got home from work with homemade peanut butter and chocolate chip pancakes! This was my first time EVER making homemade pancakes and they came out absolutely delicious! Honestly, best pancakes I have ever had. There are a few reasons for this...

Um, so first off...it's Tiffany blue...a girl's favorite color ;) Well, this girl's favorite color and it is AMAZING and everything I've ever wanted in a mixer. I have done a lot of nerd research in the last few years and I finally found my beauty in my color! It's a 5 Quart Kitchen Aid Artisan Stand Mixer with 325 watt motor and a polished stainless steel bowl, with handle! It kneads, mixes and whisks! NOTE: if you use the paddle attachment, you can shred whole cooked chicken breasts in seconds! What!? Here is where I got mine! This morning I catered to Kenny Henry's favorite flavor combo so here is what I added to this recipe:
- Instead of 3 tablespoons of sugar, I only added 2 1/2 tablespoons. It seemed like a lot in comparison to the amount of flour. I'm happy I made the adjustment, the sweetest was perfect for adding syrup. :)
- I added 3-4 hefty tablespoons of Skippy Peanut Butter to my batter and half a cup of semi sweet chocolate chips! TIP: If you coat the half a cup of chocolate chips in a tablespoon of flour before you add them to the batter, it prevents the chocolate chips from sinking directly to the bottom! It makes them evenly distributed throughout each pancake! Also, helping to prevent the chocolate from burning on the skillet!
- Adding the delicious peanut butter made my batter and my first batch of pancakes very thick, it looked like I was making cookies on the griddle, so for the second batch, I added a few tablespoons of milk to the batter and mixed well until I got the consistency that I wanted!
I made plain pancakes for my first batch, they didn't last long while waiting for the peanut butter pancakes which is why there is one lonely soldier on the plate. ;) | I coated our nonstick griddle with butter before every batch, honestly, it did not hurt one bit! I had my griddle on medium heat and only flipped when I saw little tiny bubbles coming to the raw service. Don't stress if your first batch is not perfect, the first batch rarely is. |
The combo of peanut butter and chocolate makes for a very happy boyfriend. Kenny added an extra spread of peanut butter on his pancakes, I left mine as is. :) Needless to say, we had a delicious morning.
