"Enchilada" Sloppy Joes with hidden veggies and melted lactose free Monterey Jack cheese

I know right.
Honestly and so very seriously two of my favorite recipes EVER. Especially the enchilada sloppy joe. I served the two together and they were AWESOME!
I just so happened to pin the Enchilada Sloppy Joe recipe on my "Imma Make That" board. Usually dedicated to the recipes I'm gonna make for my man in his new and beautiful kitchen. :)
Along with the chopped onion I also added a diced red and orange bell pepper. So pretty, healthy and yummy! Didn't even know they were there!
Tip: The sloppy joes are a great crowd feeder and pleaser! If you are going to double the recipe, do not forget another can of enchilada sauce! I did, still good but I missed it.
The spaghetti squash recipe I came across on Facebook actually.
Instead of broccolini I used regular broccoli. Broccolini is too bitter for my taste.
Both recipes are SO easy and super yummy! Now go make em!
