This beautiful bruschetta is so easy to make and so very easy to eat.
What you'll need:
Heriloom Cherry Tomatoes (you can use regular tomatoes, but these heirlooms from Costco were gorgeous and super flavorful! I couldn't resist!) Tip: Do not store your tomatoes in the fridge, keep them out on the counter. You will taste a fuller flavor if you eat them at room temperature.
Garlic Crostini- check out my, "Cooking with a Cast Iron Skillet" post to see my recipe!
Fresh Basil
EVOO
Salt and Pepper
Cut your heirloom tomatoes in half, or in quarters depending on size and place in a deep bowl. Drizzle 1-2 tbs of extra virgin olive oil onto the tomatoes. Sprinkle cut tomatoes generously with course salt and freshly ground pepper. Stir to combined. Take about 5 fresh basil leaves, stack them one on top of another and roll them into a long stick shape. Take your knife and cut the stick shape of basil into beautiful ribbons. That is called a chiffonade! Top your tomatoes with your beautiful basil chiffonade. Let the flavors marry in the fridge for about an hour before eating, or you can eat right away if you just can't wait!
Take a garlic crostini and top with your beautiful homemade bruschetta. Boom! Ready to eat. Beautiful, healthy, delicious, fun to cook. Can't get any better than that. Now go make it! :) I enjoyed my bruschetta with a nice glass of dry Pinot Noir. Yummm. Happy cooking!
