My all time favorite sandwich. EVER! This beautiful sandwich has gotten me through so many nights when I am craving a sandwich from my favorite pizza place. Let's just say this has taken the place of the, "blan but I want it because it's delicious even though it's bad for me" sandwich. This sandwich is so incredibly hearty and satisfying. Omg I could talk about it all day...
Gilda De Laurentiis on her show Everyday Italian years ago made the inspiration for my own grilled veggie sandwich.
So here is what I have done differently over the many many times I have made this delicious beauty. This is a monthly regular for my family and me.
How I Made It My Own:
Tip: I really wish that I had a kitchen mandolin to help slice my veggies length wise, but because I did not I cut mine into circles instead of long strips. After my first failed attempt at cutting them longways with just a chefs knife :) So, if you have a mandolin, it will come in handy! Going on the culinary wish list!
3. The only thing I did with my sliced veggies was coat them in EVOO, salt and pepper. Maybe a little italian seasoning or whatever seasoning you like is fine. After, I just threw them right the skillet. You could also grill them out side or use a grill pan!
4. I took the sundries tomatoes, however many you think you will need, depends on the number of sanwiches, and roughly chopped them. For the bread and goat cheese. Toast the bread/rolls, spread goat cheese on both sides, then spread chopped sundries tomatoes on to the bottom side. Place grilled veggies nice and high then top with the goat cheese coasted top! NOM!
Tip: My boyfriend loves and needs his protein so we grilled up some chicken breast along with the veggies and cut then into strips and also added them to the veggie sandwich. Very good!

- Instead of using baguette I have always used ciabatta bread. You can either find ciabatta rolls or you can buy a loaf and cut it along the middle and make your own sandwich sized pieces.
